Discover Ugo Chan, the Chamartín restaurant where Japanese fusion meets Spanish flavours. Sit down for a chef-led meal in which each dish is explained as it arrives, ideally shared so you can try a bit of everything.
Full description
Ugo Chan sits in Chamartín and plays with Japanese technique through a Spanish lens, a pairing reviewers rank among the best fusion cooking they've found. Guests single out the chef's presence in the room, walking diners through each dish with obvious enthusiasm, and a passionate, professional service team that impresses even people who travel to Japan regularly.
One reviewer mentions an ensaladilla among the highlights, a nod to the Madrid side of the menu. Expect an expensive, reservation-led meal of about 75 minutes, well suited to couples, with a polished, design-conscious feel.
