"Located in the 1st arrondissement, Foujita serves some of the most authentic Japanese cuisine I’ve ever had. I haven’t been to Japan yet, but this is exactly how I imagine the quality there. The menu is extensive, with plenty of options. I recommend arriving early, as there’s almost always a line. The service is efficient—you’re clearly there to eat and move on—but it works well and allows more people to experience the restaurant. They start you off with complimentary edamame, and I’d also suggest ordering the clear soup. While many people go for the mixed sushi sets, I love being able to build my own selection by choosing nigiri à la carte. The temaki are also a standout. The fish is incredibly fresh—melt-in-your-mouth, buttery, and with no fishy taste at all. The uni nigiri was my personal favorite. I noticed someone next to me order the unagidon, which I’ll definitely try next time. The tuna and chive temaki was mind-blowing, and the fatty tuna (thon gras) was unforgettable. A must-visit."
